Wilson adores salsa. There aren’t any good options that we’ve come across in the grocery stores here, so I decided to teach him to cook his favorite snack, salsa, and make his favorite drink, lemonade.
We used a very basic recipe. Tomatoes, purple onion, garlic, cilantro, salt and pepper, lime juice and a jalapeno. However, the only place you can find jalapeños here is the giant market in the city center. We don’t usually go there because it’s a trek and parking is complicated at best. So we subbed with a jalapeno concentrate that I found at the store. It’s like ketchup but with jalapeños.
He’s gotten pretty good at working the blender and juicer and seems pretty proud of his creations. The fresh salsa is especially enjoyed come “Taco Tuesday” to brighten up the flavor profiles of our plates. Long live chef Wilson!
