I’d say this is the question I get asked the most often.
In the RV, when we’re connected to power at campground, we have an electric powered convection oven, microwave, and fridge. The stove top runs on gas. When we’re not hooked up to electricity (many campgrounds don’t offer it), the fridge and stove run on gas. We do have the option of powering the microwave or oven with generators but we haven’t resorted to that…yet.
So back to the original question. What are we eating?
Pretty much the same things we ate before we left. For breakfast we have eggs, bacon, fruit, oatmeal, yogurt, bagels, or pancakes.
For lunch we usually just eat a combination of any of the following: fruit, cheese, crackers, hummus, guacamole, peanut butter and some veggies.
Dinner is usually a protein, veggies and a starch. We do eat a whole lot of black beans and rice. Not gonna lie. But here are some photos of dinners on the road. Also, after a week of eating on plastic plates and bowls, I got sick of hand washing every dish. We’ve opted for paper since. Sorry Earth.

There is some nice silverware in those pics! Impressed with your cooking on the road. We would be living on PB sandwiches as we do at home. My mom just pulled out the paper plates at our house since I can’t unload the dishwasher, but it is harder for me b/c I can’t move the plate as easily from the counter to the table one handed and on crutches.
